Apple Cake

Every year my mother would make Apple cake for the holidays--Thanksgiving, Christmas, and maybe even one Easter. It was always my favorite with everyone knowing that if they didn't hurry to get a piece then it would be gone! This is one of my favorite recipes I have and is something I find absolutely delicious for Mabon.

Apple Cake
Ingredients:
1 cup oil
2 1/2 cup flour
2 eggs
2 cups sugar
3 cups chopped apples
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 cup chopped pecans
bag butterscotch chips
Steps:
Combine oil, flour, eggs, sugar, vanilla, nutmeg and cinnamon.
Stir in apples and pecans.
Pour in pan then sprinkle butterscotch chips over the top.
Bake at 350F for 55-60 mins.
